OLIVE, SERRANO HAM & CHEESE LOAF



This loaf can be served warm straight from the oven alongside a veggie soup or toasted (this is best when it is a day old). 


OLIVE, SERRANO HAM & CHEESE LOAF

INGREDIENTS
100ml olive oil, plus extra for the tin
250g self-raising flour
100g firm mozzarella cheese, coarsely grated
50g black olives, pitted and halved
Pinch of salt
1/2 teaspoon freshly ground black pepper
3 eggs
1 tbsp extra virgin olive oil, for drizzling

METHOD
Heat oven to 200ºC. 
Oil a loaf tin and line with baking powder. Combine the flour.



Chop the ham





Chop the olives



Grate the mozzarella



In another bowl, whisk the eggs and 100ml olive oil. Make a well in the flour, then tip in the egg mixture. Mix quickly but throughly to form a thick batter. 



Spoon into the tin and smooth the top with a large metal spoon. Bake the loaf for 30 mins or until a skewer inserted in the middle comes out clean. 



Turn out onto a cake cooling rack.



The outside is not very attractive but the inside is great.



With some tomato and virgin olive oil is really good.
